My Brain Fog Experiment
After struggling with a foggy brain and mental fatigue for awhile, my naturopath has suggested I try an experiment of eating 100% gluten-free for six weeks – to see if removing gluten from my diet improves my ability to concentrate and reduces the brain fatigue and brain headaches. I have to admit, I put this off for the summer but have now kicked into gear (this Italian bread and pasta eating woman has been dreading this!). I read an article to help me get started and bought three gluten-free products (bread, crackers and pasta).
The article recommended that I be careful of eating too many of these products because of the numerous “unhealthy” ingredients added to make them more palatable. So I’m being careful to not over do it.
My Breakfast Today
I decided to toast up some gluten-free bread, melting brie cheese and topping it with tomato and a hard boiled egg. I have to say, it didn’t taste too bad! I was presently surprised. (I’m not crazy about the bread un-toasted though, I have to say.)
Oh NO! Trader Joe’s Dark Chocolate
Reading the label on a chocolate bar to share with my peanut intolerant piano student, I discovered that the chocolate bar I have been enjoying this “gluten-free” week was processed on the same equipment as wheat and may contain some … Darn… I guess I need to be reading labels more… (I recommend these bars to anyone who can tolerate the ingredients! So good 😉
